Salad:
- 2 ½ cups shredded chicken (rotisserie or cooked breast works great)
- 2 green onions, chopped
- ½ cup carrots, chopped
- 1 cup celery, chopped
- ¼ cup dill pickles, chopped
- ½ apple, chopped
- ½ cup (red or green seedless) grapes, sliced
- ½ cup dried figs, chopped
Dressing:
- ¾ cup plain Greek yogurt
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh garlic, finely chopped
- Salt and pepper, to taste

- Prep the ingredients.
Chop your green onions, carrots, celery, pickles, apple, and figs. I use the crockpot to cook 2 boneless chicken breasts and then shred the chicken right in the crockpot. You can cook your chicken any way you wish. - Make the dressing.
In a small bowl, whisk together the Greek yogurt, Dijon mustard, garlic, salt, and pepper. Adjust seasoning to your liking. - Combine and mix.
In a large bowl, toss all your chopped ingredients with the dressing until evenly coated. - Serve and enjoy!
Serve it immediately, or chill for at least 30 minutes for the flavors to meld. I typically top it with almonds. Enjoy it in a wrap, on whole-grain toast, over greens or straight from the bowl — no judgment here!
